  • eggs, beaten - 3 item
  • sugar - 1 c
  • cooked pumpkin - 2/3 c
  • lemon juice - 1 tsp
  • flour - 3/4 c
  • baking powder - 1 tsp
  • salt - 1/2 tsp
  • cinnamon - 2 Tbsp
  • ginger - 1 tsp
  • nutmeg - 1/2 tsp
  • nuts - 1 c
  • powdered sugar
  • cream cheese - 6 oz
  • butter - 1/4 c
  • vanilla - 1/2 tsp

How to make pumpkin roll:

Filling:1 c. powdered sugar6 oz. cream cheese1/4 c. butter1/2 tsp. vanilla Beat eggs; gradually add sugar. Stir in pumpkin and lemon juice. Combine flour and spices. Fold into mixture with nuts. Grease waxed papered 15 x 10 x 1-inch pan. Pour mixture into pan. Bake at 375° for 15 minutes. Sprinkle powdered sugar on towel, loosen edges of cake and invert onto towel. Roll up cake while hot. Cool and spread with filling. Reroll and store in refrigerator or freezer.
