- eggs, beaten - 3 item
- sugar - 1 c
- cooked pumpkin - 2/3 c
- lemon juice - 1 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- salt - 1/2 tsp
- cinnamon - 2 Tbsp
- ginger - 1 tsp
- nutmeg - 1/2 tsp
- nuts - 1 c
- powdered sugar
- cream cheese - 6 oz
- butter - 1/4 c
- vanilla - 1/2 tsp
How to make pumpkin roll:
Filling:1 c. powdered sugar6 oz. cream cheese1/4 c. butter1/2 tsp. vanilla Beat eggs; gradually add sugar. Stir in pumpkin and lemon juice. Combine flour and spices. Fold into mixture with nuts. Grease waxed papered 15 x 10 x 1-inch pan. Pour mixture into pan. Bake at 375° for 15 minutes. Sprinkle powdered sugar on towel, loosen edges of cake and invert onto towel. Roll up cake while hot.
