Squash dressing
Ingredients/Components
- salt - 1 tsp
- water - 2 2
- eggs, beaten - 2 item
- shortening - 5 Tbsp
- cornmeal - 1 Tbsp
- pepper - 1 tsp
- chopped onion - 4 5
- chopped fresh parsley - 5 Tbsp
- celery salt - 1/2 tsp
- crushed soda crackers - 1/2 c
- yellow squash, sliced - 3 item
- toasted bread crumbs - 1 c
- zucchini squash, sliced - 3 item
- chicken soup base - 1 Tbsp
How to make squash dressing:
Simmer both squash in shortening 10 to 15 minutes. Add salt, pepper, onion, parsley, soup base, celery salt, water and mix well. Simmer 5 minutes more. Add bread crumbs, soda crackers and cornmeal. Mix well. Add the beaten eggs, stirring fast (or the egg whites will cook and you will have white pieces in your dressing). Cook a little more to thicken. Also taste to see if you need more of the ingredients or to add a little more water if the dressing is too dry. Put into a baking dish and bake at 350° for 10 to 20 minutes to set and have a nice light brown color like your chicken dressing has.Recipe categories: < 60 mins, Time to make, Side dish.
