Summer squash casserole
Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- melted margarine - 1/2 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- can condensed cream of chicken soup - 1 item
- summer squash, sliced zucchini, yellow or combined 6 c - 2 lb
How to make summer squash casserole:
Cook squash and onion in boiling salted water for 5 minutes; drain. Combine soup, sour cream and carrots. Fold in drained squash and onion. Combine stuffing mix and margarine. Spread half of stuffing mixture in bottom of 12 x 7 1/2 x 2-inch baking dish. Spoon vegetable mixture on top. Sprinkle with remaining stuffing. Bake at 350° for 25 to 30 minutes.
