Ingredients/Components

  • eggs - 2 item
  • milk - 1/3 c
  • flour - 1 Tbsp
  • butter - 5 Tbsp
  • salt and pepper to taste - 1 item
  • grated Cheddar cheese - 1 c
  • large onion - 1 item
  • small can chopped green chilies - 1 item
  • fresh squash - 2 lb

How to make summer squash bake:

Wash and cut up the squash. Dice the onion and add to squash. Cook all in boiling salted water. Drain and mash with potato masher. Add about 3 tablespoons butter with salt and pepper to taste. Beat eggs. Stir a little hot squash into eggs before gradually adding eggs to squash. Mix in flour, milk and last 2 tablespoons butter.

Oil a shallow baking dish. Add 1/2 of squash and spread 1/2 of cheese on top and 1/2 of chilies on top of that. Add more squash and chilies and top with remaining cheese. Bake for 25 minutes in a 350° oven until center is firm.
