Summer squash casserole
Ingredients/Components
- pkg - 1 oz
- dairy sour cream - 1 c
- butter or margarine, melted - 1 c
- shredded carrots - 1 c
- chopped onion - 1 c
- can condensed cream of chicken soup - 1 item
- yellow summer squash, sliced equals 6 c - 2 lb
How to make summer squash casserole:
In saucepan, cook sliced squash and onion in boiling salted water for 5 minutes; drain. Combine cream of chicken soup and sour cream. Stir in shredded carrots. Fold in drained squash and onion.Combine stuffing mix and butter; spread half of stuffing mix in 12 x 7 1/2 x 2-inch baking dish. Spoon vegetable mixture atop. Sprinkle remaining stuffing over vegetables. Bake in a 350° oven for 25 to 30 minutes, until heated through. Serves 6.
