Squash relish
Ingredients/Components
- sugar - 3 c
- salt - 1/4 c
- vinegar - 2 c
- medium green peppers - 2 item
- medium onions - 4 item
- turmeric - 2 tsp
- large squash - 6 item
How to make squash relish:
Grind in food processor the squash, onions and green peppers. Add 1/2 cup salt. Cover with cold water and let stand for 1 hour. Rinse and drain. Mix sugar, vinegar and turmeric. Boil mixture for 3 minutes. Add squash mixture to liquids and simmer for 3 minutes. Prepare 6 pint jars and seal. This is great with pinto beans.Recipe categories: Squash, Appetizers, Spreads.
