Zucchini cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 2 tsp
- milk - 1/2 c
- salt - 1 tsp
- chopped nuts - 1 c
- flour
- soda
- cocoa - 1/2 c
- baking powder
- oleo - 3/4 c
- Add eggs, one at a time
- orange peel - 2 tsp
- coarsely grated zucchini - 2 c
How to make zucchini cake:
Cream oleo and sugar until smooth. Add eggs, one at a time. Stir in vanilla and orange peel. Add zucchini, alternately stir in dry and milk mixture, including nuts in the last addition. Pour batter into a greased and floured tube pan or Bundt pan.Bake at 350° for 1 hour until toothpick comes out clean. Cool in pan 15 minutes and turn out.Glaze:2 c. powdered sugar3 Tbsp. milk1 tsp. vanilla Beat this until smooth and pour over cake.
