Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • milk - 1/2 c
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour
  • soda
  • cocoa - 1/2 c
  • baking powder
  • oleo - 3/4 c
  • Add eggs, one at a time
  • orange peel - 2 tsp
  • coarsely grated zucchini - 2 c

How to make zucchini cake:

Cream oleo and sugar until smooth. Add eggs, one at a time. Stir in vanilla and orange peel. Add zucchini, alternately stir in dry and milk mixture, including nuts in the last addition. Pour batter into a greased and floured tube pan or Bundt pan.

Bake at 350° for 1 hour until toothpick comes out clean. Cool in pan 15 minutes and turn out.Glaze:2 c. powdered sugar3 Tbsp. milk1 tsp. vanilla Beat this until smooth and pour over cake.
