Ingredients/Components
- salt - 1 tsp
- plus 1 Tbsp - 1/2 c
- egg, beaten - 1 item
- finely chopped onion - 1 c
- black pepper - 1 tsp
- finely chopped green pepper - 1 c
- finely chopped yellow squash - 2 c
How to make squash croquettes:
Combine first 5 ingredients; mix well. Stir in flour; drop by tablespoons into 1/2-inch hot oil. Cook until browned, turning once. Drain on paper towel. Yields 6 servings. Delicious!!!Recipe categories: Squash, Low fat, Vegetables.
