  • pkg - 2 oz
  • salt - 1/2 tsp
  • flour - 3 c
  • oil
  • soda - 2 tsp
  • baking powder - 3 tsp
  • nuts - 1 c
  • powdered sugar - 1 lb
  • grated zucchini - 3 c
  • white sugar - 3 c
  • Add remaining ingredients
  • dash of ginger and nutmeg - 1 item

How to make zucchini cake:

Mix together zucchini, sugar, eggs, cinnamon, ginger, nutmeg and oil. Add remaining ingredients. Bake in 9 x 13-inch pan or 2 smaller ones at 325° for 1 hour.Frosting:1 stick oleo1 tsp. vanilla2 oz. pkg. cream cheese1 lb. powdered sugar
