Ingredients/Components
- salt - 1 tsp
- plus 1 Tbsp - 1/2 c
- egg, beaten - 1 item
- pepper - 1 tsp
- finely chopped onion - 1 c
- hot vegetable oil - 1 item
- finely chopped squash - 2 c
How to make squash croquettes:
Combine first 5 ingredients and mix well. Stir in flour. Drop by tablespoonfuls into 1/2-inch of hot oil. Cook until browned, turning once. Drain. Yields 6 servings.Recipe categories: Squash, Low fat, Vegetables.
