Ingredients/Components

  • melted butter - 1/2 c
  • butter, melted - 1 Tbsp
  • 8 oz - 1 c
  • salt and pepper to taste - 1 item
  • chopped pimento - 2 Tbsp
  • small onion - 1 item
  • squash, sliced - 2 lb
  • can chicken soup, undiluted - 1 item

How to make squash casserole:

Cook squash and onions tender in a very small amount of boiling salted water. Drain. Season with salt and pepper and one tablespoon butter. Stir in chicken soup, sour cream and pimento until well blended. Combine half of stuffing mix and squash mixture. Spoon into a 2-quart buttered casserole dish. Top with remaining stuffing mix. Bake at 375° for 30 minutes. Serves 6.
