Spinach soup



  • pkg - 10 oz
  • salt - 3/4 tsp
  • water - 2 c
  • minced onion
  • lemon juice optional - 1 item
  • dash of freshly grated nutmeg - 1 item
  • envelopes instant chicken broth mix - 2 item

How to make spinach soup:

Use a blender. If spinach is fresh, clean and wash it and remove tough stems. Feed 1/3 of the spinach into blender with 1/4 cup water. Cover. Blend until smooth. Pour into saucepan. Repeat until all spinach is blended. Add onion, salt, nutmeg, chicken mix and remaining water. Cook over moderate heat for 5 minutes.

Pour into quart jar and refrigerate until ready to use. Cover jar loosely (do not cover until soup has cooled). Use as is, or dilute with equal parts of chicken stock.
