Ingredients/Components

  • pkg - 16 oz
  • salt - 1/2 tsp
  • water - 1/2 c
  • egg - 1 item
  • salad oil - 1 Tbsp
  • Parmesan cheese - 1/4 c
  • minced onion - 2 Tbsp
  • jar spaghetti sauce - 1 oz
  • Ricotta cheese 2 c - 1 (15

How to make lasagna roll-ups:

About 1 hour before serving, cook lasagna noodles. In a 2-quart saucepan over medium heat in hot salad oil, cook broccoli and green onions until tender (5 minutes), stirring frequently. Remove from heat. Mix in with broccoli and onions the Ricotta cheese, Parmesan cheese, salt and egg.

Preheat oven to 375°. Drain noodles; place on a single layer of wax paper. Evenly spread some cheese mix on each lasagna noodle. Roll up each noodle jelly roll style.

In separate bowl mix spaghetti sauce with 1/2 cup water. Place 3/4 of the mixture into bottom of 11 x 9-inch glass baking dish. Arrange noodles, seam side down, into sauce. Top with Mozzarella cheese and remaining spaghetti sauce. Cover dish loosely with foil. Bake 30 minutes or until hot and bubbly and the cheese is melted. Makes 6 servings.
