- eggs, beaten - 3 item
- melted butter - 1/3 c
- lemon juice - 1 tsp
- salt and pepper to taste - 1 item
- dash of nutmeg - 1 item
- Cheddar or Colby cheese, grated - 1/3 lb
- frozen, chopped spinach, defrosted, but not drained - 1 (9
- creamy cottage cheese small curd - 1 c
How to make spinach souffle:
Beat eggs with flour. Add spinach, cottage cheese, Cheddar cheese, butter, nutmeg, salt and pepper. Pour into a 1 1/2-quart greased casserole dish. Bake at 350° for 55 to 60 minutes or until set.Recipe categories: Low calorie, Side dish, Vegetables.
