Ingredients/Components

  • cornstarch - 1 Tbsp
  • margarine - 2 Tbsp
  • tomato juice
  • cayenne pepper - 1/8 tsp
  • dried, crushed oregano leaves - 1/2 tsp
  • large shrimp, shelled and deveined - 1 lb
  • garlic powder or 2 cloves garlic, minced - 1/4 tsp
  • hot, cooked, parslied rice - 4 c

How to make shrimp creole:

In 10-inch skillet, over medium heat, in hot margarine, cook green pepper, celery, onion, oregano, garlic powder and cayenne red pepper until vegetables are tender-crisp, stirring often. Add 1 cup tomato juice. Heat to boiling. Reduce heat to low. Cover; cook 5 minutes.

In small bowl, stir together cornstarch and remaining half of tomato juice. Increase heat to medium. Add cornstarch mixture and shrimp to vegetable mixture. Cook until mixture boils and thickens and shrimp turn pink and opaque, stirring constantly. Serve over rice. Makes 4 cups.
