Ingredients/Components

  • flour - 1/2 Tbsp
  • medium onion, finely chopped - 1 item
  • crawfish tails - 1 lb
  • cooked rice - 1 item
  • green pepper, finely chopped - 2 3
  • parsley fresh or dried - 2 tsp
  • cayenne pepper or to taste - 1 tsp
  • salt and pepper or to taste - 1 tsp
  • to 1 1/2 sticks margarine - 1 item
  • to 4 garlic pods, finely chopped - 2 item

How to make crawfish etouffee:

Melt margarine in a large skillet. Add flour and stir until blended. Add onion, green pepper and garlic. Cook until tender. Add crawfish and cook about 10 minutes, stirring occasionally. It may even take 15 to 20 minutes to cook. Add spices. Cover and simmer until seasonings are blended (very low heat). Serve over rice.
