  • medium heads romaine lettuce - 2 item
  • small navel orange, peeled and sectioned - 1 item
  • red onion, peeled and sliced thin - 1/2 item
  • olive oil or corn or peanut oil
  • salt - 1/2 tsp
  • vinegar or lemon juice - 1/4 c
  • Dijon mustard - 1 tsp

How to make seafood salad:

Vinaigrette Dressing:3/4 c. olive oil or corn or peanut oil1/2 tsp. salt1/4 c. vinegar or lemon juice1 tsp. Dijon mustard Wash lettuce, drain and pat dry. Arrange in bowl or platter. Set aside in a cool place. Prepare the seafood. Mix with orange sections and onion. Add Vinaigrette Dressing and toss.

Vinaigrette Dressing: Measure oil into a glass or metal mixing bowl. Add salt and beat with whisk. Add vinegar and whisk until combined and creamy. Beat in mustard. Add fresh ground pepper and herbs of your choice, if desired.
