  • butter or margarine - 4 Tbsp
  • salt - 1/2 tsp
  • light cream - 1 c
  • dash of pepper - 1 item
  • medium onion - 1 item
  • grated Cheddar cheese - 1/2 c
  • small green pepper - 1 item
  • ribs celery - 2 item
  • scallops - 1 lb
  • soft breadcrumbs

How to make scallops au gratin:

Preheat oven to 350°. Butter a 1-quart baking dish. In a medium saucepan, cover scallops with cold water; bring to a boil and drain as soon as water boils. Do not overcook. Melt 2 tablespoons of the butter and mix with the breadcrumbs. Set aside. Cut green pepper, onion and celery into chunks and saute in the remaining butter about 5 minutes. Layer scallops, vegetables and crumbs in the baking dish, making 2 layers of each, ending with crumbs. Season each layer with salt and pepper. Pour the cream over the top and bake 30 minutes. Serves 4.
