Ingredients/Components

  • milk - 1/2 c
  • flour - 3 Tbsp
  • butter - 3 Tbsp
  • chopped onion - 1/4 c
  • Parmesan cheese - 2 Tbsp
  • dash of pepper - 1 item
  • can mushrooms - 3 oz
  • scallops - 1 lb
  • crushed potato chips
  • reserved liquid - 1 c
  • chopped American cheese - 1/2 c
  • fine parsley flakes - 1 Tbsp

How to make scallops au gratin:

Parboil scallops 2 minutes; drain, reserving 1 cup of liquid. Put scallops in a greased 2-quart casserole. In pot, melt butter and cook onion until tender. Add flour, then pepper, milk and liquid. Stir until thickens; add mushrooms, Parmesan cheese and parsley flakes. Cover scallops with creamed mixture; top with American cheese, then chips. Cook, covered, for 20 minutes at 350°. Also good made with crabmeat or combination of seafood.
