Ingredients/Components

  • sugar - 1/2 tsp
  • salt - 2 tsp
  • egg, slightly beaten - 1 item
  • dash of pepper - 1 item
  • ground beef - 1 lb
  • grated onion - 2 tsp
  • Minute rice - 1 c
  • marjoram optional - 1/8 tsp
  • tomato juice*

How to make rice meatballs:

*Or use 2 (8 ounce) cans tomato sauce mixed with 1/2 cup water.

Combine the rice (right from box) with ground beef, egg, onion, salt, marjoram, pepper and 1/2 cup of tomato juice. Mix lightly.

Shape the mixture into 18 balls and place in skillet. Add sugar to the remaining 2 cups of tomato juice.

Pour juice over meatballs in skillet. Bring mixture to a boil. Reduce heat; simmer, covered, 15 minutes, basting occasionally. Makes 6 servings (3 meatballs each).
