- salt and pepper - 1 item
- cloves garlic - 2 item
- parsley - 1 item
- olive oil - 1/3 c
- chopped tomatoes - 2 c
- onion - 3/4 c
- green peppers - 4 item
- zucchini - 3 c
- peeled, diced eggplant
How to make ratatouille:
In medium saucepan with lid, saute onions and garlic in olive oil. Remove/discard onions and garlic. Add, in layers, remaining ingredients to saucepan. Sprinkle with olive oil. Cover and simmer over very low heat, 35 to 45 minutes. Uncover and heat 10 minutes. Serve over pasta, rice or couscous.Recipe categories: Eggs/dairy, Cheese, Main dish.
