Ingredients/Components

  • scallops - 1/2 lb
  • shrimp - 1/2 lb
  • cloves garlic - 2 item
  • olive oil - 1/4 c
  • onion - 1 c
  • arborio rice
  • dry white wine - 1/2 c
  • clam broth - 1 c
  • boiling water - 2 c
  • brandy - 2 Tbsp
  • salt - 1 item
  • pepper - 1 item
  • parsley - 1 item

How to make seafood risotto:

In frying pan, saute first 4 ingredients. In larger frying pan, saute onion and garlic in olive oil. Add dry rice and stir until lightly browned. Add the next 4 ingredients, one at a time, and stir until absorbed by rice. Add seafood. Salt and pepper to taste. Add about 1/4 cup fresh chopped parsley.
