- chopped onion - 1 item
- bay leaf - 1 item
- salt and pepper to taste - 1 item
- olive oil - 4 Tbsp
- chopped parsley - 1 Tbsp
- tomatoes - 6 item
- eggplant - 1 item
- zucchini - 1 item
- minced clove garlic - 1 item
How to make ratatouille nicoise:
Peel and cube eggplant and zucchini. Boil in water 10 minutes; drain. Peel and cut tomatoes. Brown onion in olive oil. Add vegetables, garlic, parsley, bay leaf, salt and pepper. Cook 10 minutes and move to shallow baking dish. Sprinkle with 1/2 cup Italian cheese and brown.Recipe categories: Squash, Side dish, Zucchini.
