  • olive oil - 4 Tbsp
  • chopped parsley - 1 Tbsp
  • tomatoes - 6 item
  • eggplant - 1 item
  • zucchini - 1 item
  • minced clove garlic - 1 item

How to make ratatouille nicoise:

Peel and cube eggplant and zucchini. Boil in water 10 minutes; drain. Peel and cut tomatoes. Brown onion in olive oil. Add vegetables, garlic, parsley, bay leaf, salt and pepper. Cook 10 minutes and move to shallow baking dish. Sprinkle with 1/2 cup Italian cheese and brown.
