- fresh tomatoes - 6 item
- onion - 1 item
- leaf basil - 1 item
- zucchini unpeeled - 1 lb
- eggplants unpeeled - 2 item
- peppers 1 red, 1 yellow - 2 item
- leaf laurel - 1 item
- a bit of thyme - 1 item
How to make ratatouille nicoise:
Pour olive oil in heavy pan and brown eggplant, onion and squash together until soft. Add all other ingredients and simmer until well cooked, approximately 2 hours. Serve hot or cold.Recipe categories: Squash, Side dish, Zucchini.
