- oil - 2 Tbsp
- pepper - 1/2 tsp
- grated Parmesan cheese - 1/2 c
- large onion, diced - 1 item
- stewed tomatoes - 2 cans
- medium zucchini, thinly sliced - 2 item
- Minute Rice
How to make ratatouille rice:
Cook and stir onion and zucchini in hot oil in skillet until tender. Add tomatoes and pepper. Bring to boil; reduce heat. Cover and simmer 5 minutes. Stir in rice and cheese; cover. Remove from heat. Let stand 5 minutes.Recipe categories: Main dish, One Dish meal, Brown rice.
