Ingredients/Components
- salt and pepper - 1 item
- green pepper, cut small - 1 item
- good layer sliced eggplant, cut in 1/2 - 1 item
- good layer sliced zucchini, cut in 1/2 - 1 item
- medium onion, cut small - 1 item
- garlic powder plenty - 1 item
- Italian seasoning a lot - 1 item
- medium tomatoes, cut small - 3 item
How to make ratatouille:
Repeat layers. Drizzle over top 1/2 cup olive oil. Pour in 2 small cans tomato sauce. Bake covered for 1 to 1 1/2 hours at 325°. Soup with leftover.Run remaining through blender adding chicken broth to acquire desired consistency. Add 1 large can tomato juice or less, if desired. Salt and pepper to taste. Add other cooked vegetables, if desired. Maybe rice too.
