Ingredients/Components
- grated Monterey Jack cheese - 1 item
- chopped green chilies - 1 item
- avocado slices - 1 item
- salsa - 1 item
- chopped chicken or turkey - 1 item
- a little chopped onion - 1 item
- butter - 1 Tbsp
- large flour tortilla - 1 item
How to make quesadillas:
Set out bowls of Monterey Jack cheese, green chilies, avocado slices, salsa and a saucepan of chopped chicken or turkey sauteed with a little chopped onion.In a frying pan or griddle, melt 1 tablespoon of butter. Place 1 large flour tortilla on griddle. While it's heating, pile on a little chicken, cheese, green chilies, avocado and a spoonful of salsa in the center. Fold in each end of tortilla and fold over each side, forming a package. The tortilla should be a little crisp at this stage. Hold the folded edge in place for a few seconds to form, and then eat the quesadilla "out of hand" with more salsa if desired.
Quesadillas (pronounced Keh-sah-de-yas) are fun to make when you have a get-together and everyone can assemble their own. These can be done ahead of time and kept hot on a patter if you like.
Have a big bowl of Mexican salad with plenty of chips and salsa along on the side.
