Ingredients/Components

  • flour - 2 Tbsp
  • butter - 2 Tbsp
  • chopped onion - 3/4 c
  • chopped parsley - 1/4 c
  • sliced carrots - 1 c
  • sliced celery - 3/4 c
  • hot chicken stock - 5 c
  • pepper or to taste - 1/4 tsp
  • seasoned salt or to taste - 1 tsp
  • heavy cream or half and half - 1 c
  • peeled and diced potatoes - 4 c

How to make potato soup:

Melt butter in a large soup kettle. Add onion and saute until soft. Add flour and cook, stirring, for 3 or 4 minutes. Remove from heat and slowly stir in hot chicken stock. Add and simmer gently for about 10 minutes. Add potatoes and simmer until vegetables are tender, about 20 minutes. Add parsley, seasoned salt and pepper. Stir in cream or half and half. Makes about 8 cups or 6 to 8 servings.

For a lower calorie version, omit cream and thin, if desired, with additional chicken stock.
