Ingredients/Components
- eggs - 2 item
- flour - 1 item
- salt and pepper to taste - 1 item
- peeled potatoes Yukon Gold or Russet - 8 item
- large or 2 small peeled onions - 1 item
How to make potato latkes:
You will need a large frying pan with a lot of oil.Beat eggs with salt and pepper. Grate potatoes into eggs (so they don't darken) and onion(s). Add enough flour to consistency of pancake batter. Heat oil in large pan until hot and, with large serving spoon, ladle into pan but with latkes not touching and do not overcrowd. Turn heat down to medium-high. Turn over as it browns so each is double fried.
The secret is not to add cold batter to the pan while others are cooking. This reduces the heat and they'll absorb too much oil. Cook all and remove and then add more oil; reheat and add fresh batter. Serve with dollops of sour cream or applesauce. Enjoy!
