Ingredients/Components
- eggs - 2 item
- salt - 1 tsp
- baking powder - 1 tsp
- onion, grated - 1 item
- matzo meal - 1 Tbsp
- vegetable shortening for frying - 1 item
- large potatoes, finely grated - 5 item
How to make potato latkes:
Squeeze most of water out of the grated potatoes using your hands. Put them into a large bowl; add eggs, beaten. Add matzo meal, baking powder and salt; stir well. Add grated onion. Heat shortening in heavy pan, fat hot but not smoking. Drop latke batter by tablespoons; fry on both sides until crisp and brown. Drain on absorbent paper.
