  • salt - 1/2 tsp
  • onion - 1/2 item
  • eggs, beaten well - 4 item
  • uncooked pie crust - 1 item
  • diced or grated cheese - 1 c
  • to 1 whole green pepper - 1/2 item
  • chopped or diced ham - 1 c
  • scalded fresh cream or canned milk - 2 c
  • few grains pepper to taste - 1 item

How to make quiche lorraine:

Saute green pepper, onion and ham until onion is tender. Arrange mixture evenly over bottom of pie shell. Sprinkle cheese evenly over this mixture. Pour the following custard mixture over all the ingredients in pie shell.

Beat together the scalded cream, eggs, salt and pepper and pour over previous mixture. Bake for 12 minutes at 450°, then reduce to 300° for approximately 35 minutes or until a silver knife inserted comes out without ingredients clinging to knife. Bacon or other meats may be substituted for ham. Let set a few minutes before serving.
