Wild rice soup
Ingredients/Components
- half and half - 1 c
- salt - 1/2 tsp
- flour - 1/2 c
- margarine - 6 Tbsp
- chicken broth - 3 c
- minced onion - 1 Tbsp
- cooked wild rice - 2 c
- minced ham - 1/3 c
- finely grated carrots - 1/2 c
- chopped, slivered almonds - 3 Tbsp
- dry sherry wine optional - 2 Tbsp
How to make wild rice soup:
In saucepan, melt margarine. Saute onion until tender. Blend in flour. Gradually add broth. Cook, stirring constantly, until mixture comes to a boil. Boil for 1 minute. Stir in rice, ham, carrots, almonds and salt. Simmer for 5 minutes. Blend in half and half and sherry. Heat to serving temperature. Garnish with minced parsley and chives.
