Ingredients/Components
- envelope yeast - 1 item
- lukewarm water - 1/4 c
- sugar - 1 Tbsp
- egg yolks, beaten - 4 item
- light brown sugar - 1/2 c
- soft butter - 1/2 c
- cocoa - 1/2 c
- few grains salt - 1 item
- vanilla - 2 tsp
- warm milk - 1/2 c
- sifted flour - 2 c
- egg whites, beaten - 4 item
- currants, soaked in 2 Tbsp - 1/2 c
- Beat egg yolks with brown sugar until thick; then beat butter and add cocoa, salt and vanilla
- Dutch cocoa - 1/2 c
- butter - 1 tsp
- drops mocha extract - 3 item
How to make chocolate bread:
Dissolve yeast in lukewarm water with 1 tablespoon sugar until frothy. Beat egg yolks with brown sugar until thick; then beat butter and add cocoa, salt and vanilla. Beat until smooth. Add the warm milk and flour. Beat 2 minutes. Fold in egg whites (beaten until peaked, not dry) and currants.Grease the tube pan and set in a pan of warm water. Cover with a towel and let batter rise until it comes to top of pan. Preheat the oven to 375° and bake cake 15 minutes. Reduce the heat to 350° and bake 25 to 30 minutes. Two minutes after it has come from the oven, loosen the sides with a sharp pointed knife and turn upside down onto a cake plate. Sprinkle with powdered sugar and cover with Chocolate Icing.Chocolate Icing:4 Tbsp. dark, black coffee1/2 c. Dutch cocoa1 tsp. butter3 drops mocha extract You may use your favorite yeast dough recipe, ready-made dough or frozen dough. Grease a cookie sheet and roll out dough to fit the cookie sheet.
