Pepper relish
Ingredients/Components
- sugar
- salt - 3 Tbsp
- chopped green peppers
- chopped white onions - 5 c
- chopped red peppers
- vinegar 5% - 1 pt
How to make pepper relish:
Wash peppers and remove seeds and white portion. Peel onions and chop fine. Combine and cover with boiling water. Let stand 10 minutes. Drain. Combine vinegar, sugar and salt. Add pepper mixture. Bring to a boil and boil gently for 5 minutes. Pour immediately into hot sterilized jars. Seal at once. Makes about 5 pints.For cabbage pepper relish, decrease green and red peppers to 4 1/2 cups each and add 2 cups finely chopped cabbage.
