Mini cheesecakes

Ingredients/Components

• eggs - 2 item
• vanilla - 2 tsp
• pkg - 2 oz
• brown sugar - 1/2 c
• vanilla wafers - 1 item
• cherries or nutmeat - 1 item

How to make mini cheesecakes:

Beat cream cheese, eggs, vanilla and brown sugar until well blended (will be slightly lumpy). Put a vanilla wafer (round side down) in bottom of cupcake papers and fill 3/4 full with mixture. Top with cherry or nutmeat. Bake 15 minutes at 350°.
