Ingredients/Components
- milk - 1/3 c
- egg - 1 item
- ground beef - 1 lb
- taco seasoning mix - 1 pkg
- creamed corn - 1 c
- box Jiffy cornbread mix - 1 item
- Cheddar or Longhorn cheese - 1/2 lb
- can chili or kidney beans - 1 item
How to make mexican cornbread casserole:
Mix cornbread, as directed, in large casserole dish. Brown and drain ground beef. Stir in taco seasoning. Add to casserole dish. Add beans (undrained) and creamed corn. Top with cheese. Bake, covered, or, uncovered, for 45 minutes. (Also good with green peppers and chopped stewed tomatoes.)Recipe categories: Breads, Grains, Side dish.
