  • sugar - 2 Tbsp
  • milk - 2 c
  • salt - 1 tsp
  • vinegar - 1 Tbsp
  • warm water
  • bread flour - 2 c
  • honey - 1 tsp
  • dry yeast - 1 pkg
  • lukewarm water - 2 c
  • sourdough starter - 2 c
  • Add sugar, vinegar, salt, flour and remaining water
  • handful of cornmeal - 1 item
  • egg white wash - 1 item

How to make sourdough french bread:

Dissolve yeast in 1/4 cup warm water. Add sugar, vinegar, salt, flour and remaining water. Place in covered container and set in a warm place for 2 to 3 days to ferment. Do not cover too tightly, as gasses from fermentation process could explode top of container. Replenish with equal parts of flour and water. Once fermented, place in refrigerator. Stir well before using.List 1:2 pkg. dry yeast1 tsp. honey2 c. lukewarm water2 c. sourdough starter2 c. bread flour2 c. milk List 2:2 Tbsp. salt8 to 10 c. bread flour handful of cornmeal egg white wash Proof yeast with honey in 1/2 cup of the lukewarm water. Add the rest of the ingredients from List 1 and mix well. Let sponge overnight. Next day, add salt and flour (List 2). Mix dough until it is medium-stiff and elastic. Let rise until double in bulk. Punch down; knead until dough is smooth again. Divide in half and shape into 2 long loaves or 3 to 4 smaller loaves. Put on baking sheet that has been sprinkled with cornmeal. Brush tops with egg white wash (egg whites mixed with 1 teaspoon water). Slash diagonally 5 to 6 times and let bread rise again.

Preheat oven to 350° and at the same time place an empty pan on the bottom shelf. When the bread is ready, put it in the oven and fill the empty pan with tap water. Bake in the steam for 15 minutes, then remove the pan of water and bake 30 to 45 minutes more.

This is a great recipe but takes awhile to make. The bread freezes well also.
