Chocolate chip banana muffins
Ingredients/Components
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/4 tsp
- baking soda - 1 tsp
- all-purpose flour - 1 c
- firmly packed brown sugar - 3/4 c
- butter or margarine, softened - 1/2 c
- whole wheat flour - 1 c
- mini semi-sweet chocolate chips - 1/2 c
- mashed ripe bananas
How to make chocolate chip banana muffins:
Heat oven to 350°. In large mixer bowl, combine sugar and butter. Beat at medium speed, scraping bowl often, until mixture is creamy, 1 to 2 minutes. Add bananas, eggs and vanilla. Continue beating, scraping bowl often, until well mixed, 1 to 2 minutes. In medium bowl, stir together flours, baking soda and salt. Add flour mixture to banana mixture; stir just until moistened. Fold in chocolate chips. Spoon into greased muffin pans. Bake for 18 to 25 minutes or until light golden brown. Cool 5 minutes; remove from pans.
