Ingredients/Components

  • sour cream - 1 c
  • salt
  • eggs, beaten - 2 item
  • baking powder - 3 tsp
  • melted shortening - 2/3 c
  • Cheddar cheese - 1 c
  • corn meal - 1 c
  • cream-style corn - 1 c
  • can chiles, whole or diced - 1 oz

How to make mexican corn bread:

Mix together all ingredients, except chiles and cheese. Pour half of batter into 9-inch square greased pan. Spread chiles and cheese on evenly. Then pour remaining batter on top.

Place in 350° oven and bake for 1 hour. Cut corn bread into 12 squares while hot and top is crisp.
