Mexican chicken stew
Ingredients/Components
- garlic powder
- sliced green onion - 1/2 c
- chili powder - 1 tsp
- chicken broth - 1 c
- 4 oz - 1 c
- olive oil - 1 Tbsp
- ground cumin
- seasoned salt - 1/2 tsp
- can whole kernel corn - 1 oz
- oregano leaves - 1 tsp
- can red kidney beans, undrained - 1 oz
- boneless, skinned chicken breast, cut in cubes - 1 lb
How to make mexican chicken stew:
Heat oil in large skillet over medium-high heat. Add chicken and cook 5 minutes, stirring often. Remove chicken and set aside. Add remaining ingredients, except onion to skillet; mix well. Bring to a boil, reduce heat to medium and cook 10 minutes. Stir in cooked chicken and onion; simmer 5 to 10 minutes. Makes 6 servings.Recipe categories: Soups & stews, Main dish, Stew.
