Mexican chicken stew
Ingredients/Components
- sliced green onion - 1/2 c
- chili powder - 1 tsp
- chicken broth - 1 c
- can whole kernel corn, drained - 1 oz
- olive oil - 1 Tbsp
- ground cumin
- can chopped green chilies - 1 oz
- can black beans, drained and rinsed - 1 oz
- oregano leaves - 1 tsp
- can red kidney beans undrained - 1 oz
- boneless, skinless chicken breast, cut into cubes - 1 lb
- California Style Blend garlic powder
How to make mexican chicken stew:
Heat oil in large skillet over medium-high heat. Add chicken and cook 4 to 5 minutes, stirring often. Remove chicken and set aside. Add remaining ingredients except onion to skillet; mix well. Bring to a boil; reduce heat to medium and cook 10 minutes. Stir in cooked chicken and onion; simmer 5 to 10 minutes. If desired, serve with tortilla chips or corn bread.
