Mexican chicken soup



  • can chicken broth - 1 item
  • shredded cabbage - 1 c
  • frozen corn - 1 c
  • large can whole tomatoes - 1 item
  • dry white wine, divided - 4 c
  • large onions, quartered - 4 item
  • cloves garlic whole - 6 item
  • large stewing chicken - 1 item

How to make mexican chicken soup:

Place chicken, garlic, onions, broth and 2 cups of wine in large pot on top of stove. Bring to a boil, then lower heat to simmer. Simmer until chicken is falling from bones. Remove chicken from pot and pull meat from bones.

Return chicken meat to pot along with remaining 2 cups of wine, tomatoes, corn and cabbage. Simmer soup until corn and cabbage are done.

To serve, place 3 or 4 cubes of cheese in bottom of bowl. Ladle soup over cheese.
