Bean and bacon soup
Ingredients/Components
- salt - 4 tsp
- water - 3 qt
- chopped onions - 3 c
- tomato juice
- diced celery - 2 c
- diced carrots - 1 c
- green pepper - 1/2 item
- dried navy beans - 1 lb
- diced potatoes - 2 c
- sugar to taste - 2 Tbsp
- bay leaf optional - 1 item
- slices bacon or more ham can also be used - 8 item
How to make bean and bacon soup:
Combine beans and water in large kettle. Bring to boil and boil for 2 minutes. Cover and let stand 1 hour, then boil again until tender. Fry bacon until crisp, then cook onions in bacon fat. Add to soup with bacon drippings. Also add tomato juice, then simmer 1 hour. Add rest of ingredients and simmer 30 minutes. Pressure can 1 1/2 hours or cold pack 3 hours.Recipe categories: American, Soups & stews, North american.
