Bean and bacon soup



  • pepper - 2 tsp
  • carrots - 4 c
  • potatoes - 8 c
  • tomato juice - 4 qt
  • salt to taste - 1 item
  • bay leaves - 2 item
  • celery - 4 6
  • onions - 6 c
  • bacon - 2 lb
  • navy beans - 4 lb

How to make bean and bacon soup:

Soak beans overnight, then cook until real soft. Cut bacon fine and fry. Remove bacon and cook cut up onion in bacon grease until soft. Put all ingredients together in canner and heat until it simmers. Remove bay leaves before putting in jars. Makes about 16 quarts. Process 1 hour in pressure canner or 2 hours in water bath.

I like to cook my onions with vegetables until real soft and put beans and vegetables through a Victoria strainer twice. This makes a smaller amount but is thick and creamy.
