Marinated carrots
Ingredients/Components
- sugar - 1 c
- salt - 1 tsp
- oil - 1 c
- vinegar - 3/4 c
- pepper - 1/2 tsp
- can tomato soup - 1 item
- carrots, sliced - 2 lb
- onion, sliced very thin - 1 item
- green pepper, sliced very thin - 1 item
How to make marinated carrots:
Slice carrots and cook until slightly crisp. Do not overcook. Cool. Put salt, pepper, soup, oil, sugar and vinegar in mixer. Beat 5 minutes. Pour over carrots. Add onion and green pepper. Store in glass container in refrigerator. Keeps two weeks or more. Makes 2 quarts. When carrots are gone, use liquid for salads as dressing.Recipe categories: < 60 mins, Vegetables, Carrots.
