Ingredients/Components
- salt
- water - 1/2 c
- Worcestershire sauce - 1 tsp
- chopped onion - 2 Tbsp
- chopped green pepper - 1 Tbsp
- can tomatoes - 1 1/2
- uncooked rice - 1/2 c
- lean ground beef raw - 1 lb
- can "Old El Paso" tomatoes and green chilies - 1 item
How to make little porcupines:
Wash rice and drain. Combine rice, meat, onion, green pepper and 1/2 teaspoon of salt. Form into small balls. Heat tomatoes and other ingredients in a heavy skillet (including remaining salt). Drop meat balls in and cover. Simmer 45 minutes or until done.Note: Good served with steamed cabbage and/or mashed potatoes.
