Lemon meringue pie
Ingredients/Components
- sugar
- salt - 1/8 tsp
- butter - 1/4 c
- cornstarch - 6 Tbsp
- egg yolks - 3 item
- boiling water - 2 c
- egg whites - 3 item
- lemon juice - 1 tsp
- lemon rind - 1/4 tsp
- lemon juice juice of 1 1/2 to 2 fresh lemons - 1/2 c
How to make lemon meringue pie:
Mix first 3 ingredients in large pan. Add 1/4 teaspoon lemon rind and 2 cups boiling water. Cook, stirring until thick and turning clear. Simmer, very low heat, for 10 minutes. Add 1/4 cup butter, but do not stir in. Mix 3 egg yolks with 1/2 cup lemon juice (juice of 1 1/2 to 2 fresh lemons). Mix all together and pour into prebaked single crust pie shell. Bake in 400° oven for 10 minutes. Beat 3 egg whites until stiff. Add 1/8 teaspoon salt, 1 teaspoon lemon juice and slowly add 6 tablespoons sugar. Beat. Pile on baked lemon and put back in oven at 350° for 18 minutes.Recipe categories: Pie, Pies and tarts, Cakes.
