Lemon meringue pie
Ingredients/Components
- sugar
- salt - 1/8 tsp
- cornstarch - 6 tsp
- egg yolks - 3 item
- pinch of salt - 1 item
- boiling water - 2 c
- margarine - 4 tsp
- lemon juice - 1/2 c
- grated rind of 1 lemon
- 9-inch pastry shell, baked - 1 item
- Add water and grated rind
How to make lemon meringue pie:
In a saucepan, mix sugar, salt and cornstarch together. Add water and grated rind. Cook over medium heat until mixture begins to thicken, stirring frequently. Reduce heat and simmer 10 minutes. Stir hot mixture into egg yolks which have been mixed with lemon juice. Strain into baked pie shell. Bake at 400° for 10 minutes. Top with meringue.Meringue:2 egg whites pinch of salt1/2 tsp. lemon juice3 tsp. sugar Beat whites until stiff. Add salt and lemon juice. Continue beating, adding 1 teaspoon sugar at a time.
