Lemon meringue pie
Ingredients/Components
- sugar - 1 c
- salt - 1/4 tsp
- flour - 2 Tbsp
- cornstarch - 1/4 c
- egg yolks - 3 item
- boiling water - 2 c
- margarine - 2 Tbsp
- lemon juice - 6 Tbsp
- grated lemon peel - 1 Tbsp
- pie crust - 1 item
How to make lemon meringue pie:
In top of double boiler, mix cornstarch, flour, sugar and salt. Gradually stir in boiling water. In small bowl, beat egg yolks into cornstarch mixture. Place top of double boiler over boiling water and cook about 5 minutes until filling is thick, stirring occasionally. Remove pot from boiling water. Mix in margarine, lemon peel and lemon juice. Cover in cooker and cool slightly. Pour in crust. Top with your favorite meringue.Recipe categories: Pie, Pies and tarts, Cakes.
