Ingredients/Components
- sugar
- vanilla - 1/2 tsp
- salt - 1/8 tsp
- cornstarch - 1/2 c
- water
- egg yolks - 4 item
- margarine - 3 Tbsp
- cream of tartar - 1/2 tsp
- lemon juice - 1/2 c
- grated lemon rind - 1 tsp
- 9-inch pastry shell, baked - 1 item
- Combine egg yolks, water and lemon juice in bowl and add to sugar mixture
How to make best ever lemon meringue pie:
Combine sugar, cornstarch and salt in a saucepan and set aside. Combine egg yolks, water and lemon juice in bowl and add to sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute, stirring constantly. Remove from heat. Stir in butter and lemon rind. Spoon into pie shell.Meringue:4 egg whites1/2 tsp. cream of tartar1/2 c. sugar1/2 tsp. vanilla Beat egg whites and tartar at high speed with mixer just until foamy. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves. Add vanilla and beat well.
